Prior to the invention of vodka Russians usually consumed honey, beer, braga. At that time, there were frequent cases of poisoning with poor-quality beverages, which were damaged during fermentation. Sometimes they even resulted in death. According to another widely spread yet questionable version, winemakers learned how to evaporate braga and condensate. It was the first step towards creating vodka.

The term "vodka" itself appeared later, in the 17th-18th centuries. Philologists believe that the word "water" was the underlying basis of this concept.

Privilege of noblemen

In the 18th century winemaking began to be carried out exclusively by nobles. This occupation was considered prestigious and honorary. In order to strengthen the position of the nobility in this field, Empress Elizabeth Petrovna even issued a decree on the special right of titled nobles to "cubes for storing vodka." That 's what special transfer tanks were called. The best drinks were considered to be those prepared by the Princes of Kurakin and Counts of Rumyantsev from Sheremetyevo. Raw materials for vodka production were rye, wheat and potatoes.

Later there emerged a fashion for making vodka with "flavorings". All kinds of variations of the drink became known. Anise, birch, cherry, raspberry, pepper, birch, apple vodka were particularly popular.

The names of these additives began with all letters of the alphabet. Sometimes the following entertainment was arranged during the stalls - the guests made any word and blindfolded one of their comrades. This person was alternately given to try different types of vodka - in the sequence in which the letters in the secret word went.

What is Mendeleev 's merit?

Thus, by the time Dmitry Mendeleyev wrote his doctoral thesis on the connection of alcohol with water vodka was already well known in Russia. In terms of alcoholic beverages, the scientist did not invent anything. In his paper, he calculated how much of the final product would "disappear" when different volumes of water were added. Vodka producers used these calculations to obtain the ideal beverage composition.

Information that Mendeleev invented to make vodka 40-degree is also a myth. In the 19th century, the standard of quality was considered to be 38°. With the invention of alcohol meters, the Minister of Finance of the Russian Empire Reithern proposed to round this value to 40°. The fact is that in the process of preparation, due to different features, the strength of the final product could decrease within two degrees. Russian chemists - Kucherov, Verigo and others improved the technology of vodka preparation, making it "hygienically clean." As such, the drink has reached the present day.

Spirits used in making of Russian vodka

The Russian state quality system has published a rating of quality and safe for health vodka. The research was conducted in December 2020. Their results can be described as encouraging for our consumer. Practically all selected samples (32 manufacturers, 51 brands) meet the quality requirements for vodka. What kind of alcohol do they make vodka from?

Vodka is made only from food ethyl rectified alcohol. Only qualitatively purified varieties produced from food raw materials have a "tolerance":

"Alpha". It is produced from bread cereals - rye, wheat or a mixture of different    ratios. Methyl alcohol content in "alpha" purification does not exceed 0.002%;

"Lux" is produced from various types of grain of cereal crops, both one kind and a mixture with the addition of potatoes (not more than 34%). Methyl alcohol content is allowed - up to 0.002%, as well as in "alpha" purification;

"Extra" is also grain alcohol. It is produced from wheat, rye, maize and triticale. May contain not more than 0.023% methyl alcohol;

Higher purification suggests that alcohol can be produced from various vegetable raw materials grown in agricultural enterprises: grains, potatoes, sugar beet, etc., as well as sugar production wastes. It may contain up to 0.031% methanol (methyl alcohol). It was the quality of alcohol that the attention of experts was aimed at. They looked for components that should not be in alcohol, and also checked the permissible amount of those substances that are necessarily present in alcohol (even food, high degree of purification).

For this purpose spectral and chemical analyses are carried out, which are then compared with a reference sample. The main efforts were made to identify particularly dangerous elements for humans. To learn the nature of alcohol (food or technical), as well as to check how well it is purified, experts searched in samples of vodka sent for examination:

Methyl alcohol (methanol) is a substance that is deadly to humans. Causes severe damage to internal organs and leads to death.

Acetic aldehyde is contained in large quantities in technical alcohols and liquids called Hawthorn. Drunk, turns into acetic acid and literally "burns"

Vodka glasses are ready for the Russian holidaymucous membranes of LCT organs. When drinking and even being in a room saturated with acetic aldehyde vapours, it provokes blindness, lesions (sometimes irreversible) of the respiratory tract.

Sivus oils, ester compounds cause not only severe hangover, but also cirrhosis of the liver. Toxic elements from Mendeleyev table (lead, arsenic, cadmium, mercury) may be present in poor quality grain or other plant raw materials. This poison shouldn’t be in food alcohol.

Furfurol is a by-product of fermentation. Its toxicity and ability to cause mutations in rats have been scientifically proven. With regard to humans, only irritating effects on the skin and mucous membranes have been proven. The correct rectification removes it from the final product (alcohol).

A crotone aldehyde indicating that denaturate is present in the sample, a substance consisting of technical alcohol, gasoline, etc., used to create solvents.

Thorough analyses were carried out, which determined that none of the samples selected had quality deviations, and the indicated degree of purification of the alcohols from which vodka was created was consistent with the marking.
